Description

A traditional Polish Christmas Eve mushroom soup, rich in flavor and perfect for festive occasions.


Ingredients

  • 500g dried wild mushrooms
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, cubed
  • 1.5L vegetable broth
  • 200ml sour cream
  • 2 tbsp butter
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Soak dried mushrooms in warm water for 30 minutes, then drain and chop.
  2. Melt butter in a pot, sauté onions until translucent.
  3. Add carrots, celery, and potatoes. Cook for 5 minutes.
  4. Add mushrooms, vegetable broth, and bay leaf. Simmer for 25 minutes.
  5. Remove bay leaf, blend half the soup for a creamy texture.
  6. Stir in sour cream, season with salt and pepper. Serve hot.
