Pierniki are traditional Polish gingerbread cookies, known for their rich spices and deep flavor.
Ingredients

- 3 cups all-purpose flour
- 1 cup honey
- 1/2 cup brown sugar
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/4 tsp black pepper
- 1 egg
- 1/2 cup butter, melted
Instructions
- Mix honey and brown sugar in a saucepan over low heat until dissolved.
- Remove from heat and stir in melted butter.
- In a separate bowl, combine flour, baking soda, and spices.
- Add the honey mixture to the dry ingredients and mix well.
- Beat in the egg until the dough is smooth.
- Cover and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C).
- Roll out dough and cut into shapes.
- Bake for 10-12 minutes until edges are firm.
- Cool before serving.
Notes
- Store in an airtight container to keep them soft.
- Dough can be chilled overnight for easier handling.
- Decorate with icing if desired.
