Description
Kutia is a traditional Eastern European dish often served during Christmas Eve. It’s a sweet grain pudding made with wheat berries, honey, nuts, and dried fruits.

- 1 cup wheat berries
- 4 cups water
- 1/2 cup honey
- 1/2 cup chopped walnuts
- 1/2 cup dried fruits (raisins, apricots, or figs)
- 1/4 cup poppy seeds
- 1/4 teaspoon salt
Instructions
- Rinse the wheat berries and soak them overnight in water.
- Drain and cook the wheat berries in 4 cups of water with salt until tender (about 1-2 hours).
- Drain any excess water and let the wheat berries cool.
- Mix in honey, chopped walnuts, dried fruits, and poppy seeds.
- Chill for at least 2 hours before serving.
Notes
- Soaking wheat berries overnight reduces cooking time.
- Adjust honey quantity based on your preferred sweetness.
- Serve cold for best texture.
