Description

Traditional Hungarian New Year’s dishes to celebrate the holiday.


Ingredients

Scale
  • 500g pork (shoulder or leg)
  • 200g smoked sausage
  • 1 large onion
  • 2 cloves garlic
  • 1 tbsp paprika
  • 1 tsp caraway seeds
  • 1 bay leaf
  • Salt and pepper to taste
  • 500g sauerkraut
  • 2 tbsp lard or oil

Instructions

  1. Chop the pork into bite-sized pieces.
  2. Dice the onion and mince the garlic.
  3. Heat lard in a pot and sauté the onion until golden.
  4. Add pork, garlic, paprika, caraway seeds, bay leaf, salt, and pepper. Cook for 10 minutes.
  5. Add sauerkraut and enough water to cover. Simmer for 1 hour.
  6. Slice the smoked sausage and add it to the pot. Cook for another 20 minutes.
  7. Serve hot with fresh bread.

Notes

  • Adjust paprika to your taste.
  • For extra flavor, add a splash of white wine.
  • Best served with pickles.
