Ingredients

Instructions
- Clean the leeks thoroughly and slice them thinly.
- In a bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Toss the sliced leeks with the dressing until evenly coated.
- Sprinkle chopped parsley on top before serving.
Notes
- Use only the white and light green parts of the leeks.
- For extra crunch, add some toasted nuts.
