- 2 beef fillets (200g each)
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp butter
- 2 garlic cloves, minced
- 1 sprig fresh rosemary
- 1 cup red wine
- 1 cup heavy cream
- 200g asparagus, trimmed
- 1 tbsp lemon juice
Instructions
- Season the beef fillets with salt and pepper.
- Heat olive oil in a pan over medium-high heat.
- Sear the fillets for 3-4 minutes per side for medium-rare.
- Add butter, garlic, and rosemary to the pan.
- Baste the fillets with the melted butter for 1-2 minutes.
- Remove the fillets and let them rest.
- Deglaze the pan with red wine and reduce by half.
- Add heavy cream and simmer until the sauce thickens.
- Steam the asparagus for 3-4 minutes and drizzle with lemon juice.
- Plate the fillets with asparagus and pour the sauce over the beef.
Notes
- Let the beef rest for 5 minutes before slicing.
- Use a meat thermometer for perfect doneness.
- Pair with a glass of red wine for a complete experience.
