Ingredients

  • 2 beef fillets (200g each)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 sprig fresh rosemary
  • 1 cup red wine
  • 1 cup heavy cream
  • 200g asparagus, trimmed
  • 1 tbsp lemon juice

Instructions

  1. Season the beef fillets with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat.
  3. Sear the fillets for 3-4 minutes per side for medium-rare.
  4. Add butter, garlic, and rosemary to the pan.
  5. Baste the fillets with the melted butter for 1-2 minutes.
  6. Remove the fillets and let them rest.
  7. Deglaze the pan with red wine and reduce by half.
  8. Add heavy cream and simmer until the sauce thickens.
  9. Steam the asparagus for 3-4 minutes and drizzle with lemon juice.
  10. Plate the fillets with asparagus and pour the sauce over the beef.

  • Let the beef rest for 5 minutes before slicing.
  • Use a meat thermometer for perfect doneness.
