Ingredients

- 200g fresh spinach
- 150g smoked salmon
- 100g cream cheese
- 1 sheet puff pastry
- 1 egg (for brushing)
- 1 tsp lemon juice
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 180°C (350°F).
- Blanch spinach in boiling water for 1 minute, then drain and squeeze out excess water.
- Mix cream cheese with lemon juice, salt, and pepper.
- Roll out puff pastry on a floured surface.
- Spread cream cheese mixture evenly over the pastry.
- Layer spinach and salmon on top.
- Roll the pastry tightly and seal the edges.
- Brush with beaten egg for a golden finish.
- Bake for 25-30 minutes until golden brown.
- Slice and serve warm.

- Use fresh spinach for best results.
- Adjust seasoning to taste.
- Let cool slightly before slicing.
