Ingredients

- 1 whole chicken (about 1.5 kg)
- 2 cups rice
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
- 4 cups chicken broth
- 1 bay leaf
- 1 tsp thyme
Instructions
- Preheat oven to 180°C (350°F).
- Season the chicken with salt and pepper.
- Heat olive oil in a large pot and brown the chicken on all sides.
- Remove the chicken and sauté onions, carrots, and garlic in the same pot for 3 minutes.
- Add rice, broth, bay leaf, and thyme, then bring to a boil.
- Place the chicken on top of the rice, cover, and bake for 45 minutes.
- Let rest for 10 minutes before serving.
Notes
- For a richer flavor, use bone-in chicken.
- Adjust salt to taste if using store-bought broth.
- Serve with a fresh salad for balance.
