Description

A traditional meal to celebrate New Year’s Day, featuring hearty and flavorful dishes to start the year right.


Ingredients

  • 1 whole chicken (about 1.5 kg)
  • 2 cups rice
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp olive oil
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 tsp thyme

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Season the chicken with salt and pepper.
  3. Heat olive oil in a large pot and brown the chicken on all sides.
  4. Remove the chicken and sauté onions, carrots, and garlic in the same pot for 3 minutes.
  5. Add rice, broth, bay leaf, and thyme, then bring to a boil.
  6. Place the chicken on top of the rice, cover, and bake for 45 minutes.
  7. Let rest for 10 minutes before serving.

Notes

  • For a richer flavor, use bone-in chicken.
  • Adjust salt to taste if using store-bought broth.
  • Serve with a fresh salad for balance.
