- 2 hard-boiled eggs, chopped
- 1/4 cup pickles, diced
Instructions
- Boil the potatoes until tender, then cool and cube them.
- In a large bowl, mix mayonnaise, mustard, salt, and black pepper.
- Add the potatoes, onion, eggs, and pickles to the bowl.
- Gently toss everything until well coated.
- Refrigerate for at least 1 hour before serving.

- For a lighter version, use Greek yogurt instead of mayonnaise.
