Description
A refreshing and easy-to-make Greek pasta salad.
Ingredients

- 500g macaroni pasta
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 red onion, finely chopped
- 200g feta cheese, cubed
- 100g black olives, sliced
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Boil the macaroni pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the cooked pasta, cucumber, bell pepper, red onion, feta cheese, and olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
- You can add cherry tomatoes for extra freshness.
- Substitute feta with vegan cheese for a dairy-free version.
- Best served cold.
