Description

A refreshing and easy-to-make Greek pasta salad.


Ingredients

  • 500g macaroni pasta
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 red onion, finely chopped
  • 200g feta cheese, cubed
  • 100g black olives, sliced
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil the macaroni pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooked pasta, cucumber, bell pepper, red onion, feta cheese, and olives.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Refrigerate for at least 30 minutes before serving.

Notes

  • You can add cherry tomatoes for extra freshness.
  • Substitute feta with vegan cheese for a dairy-free version.
