Ingredients

  • 250g all-purpose flour
  • 150g unsalted butter, softened
  • 80g powdered sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cream the butter and powdered sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract, mixing well.
  4. Sift in the flour and salt, then knead into a smooth dough.
  5. Roll out the dough to 5mm thickness and cut into shapes.
  6. Place on a baking tray lined with parchment paper.
  7. Bake for 12-15 minutes until lightly golden.
  8. Cool on a wire rack before serving.

Notes

  • Chill the dough for 30 minutes if it’s too soft.
  • Store in an airtight container for up to a week.
