Description

Ingredients

  • 1 whole turkey (1214 lbs)
  • 1 cup unsalted butter, softened
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 slices bacon, chopped
  • 1/2 cup cranberry sauce

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Rub the turkey with softened butter, rosemary, thyme, salt, and pepper.
  3. Place turkey in a roasting pan and pour broth into the bottom.
  4. Roast for 3-4 hours, basting occasionally, until internal temperature reaches 165°F.
  5. Boil potatoes until tender, then mash with cream and butter.
  6. Sauté Brussels sprouts and bacon until crispy.
  7. Serve turkey with mashed potatoes, Brussels sprouts, and cranberry sauce.

Notes

  • Let the turkey rest for 20 minutes before carving.
  • Use leftover broth for gravy.
