Ingredients

- 200g mixed greens (lettuce, arugula, spinach)
- 100g cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red bell pepper, diced
- 50g pomegranate seeds
- 50g walnuts, chopped
- 100g feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red bell pepper.
- Sprinkle pomegranate seeds and walnuts over the salad.
- Add crumbled feta cheese.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper.
- Toss gently before serving.

- You can add roasted nuts for extra crunch.
- Replace feta with goat cheese if preferred.
