Ingredients

  • 500g white fish fillets
  • 2 onions, sliced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 tomatoes, diced
  • 3 garlic cloves, minced
  • 1/2 cup olive oil
  • 1/2 cup white wine
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup parsley, chopped

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Layer onions, carrots, celery, and tomatoes in a baking dish.
  3. Place fish fillets on top of the vegetables.
  4. Mix olive oil, white wine, lemon juice, oregano, salt, and pepper in a bowl.
  5. Pour the marinade over the fish and vegetables.
  6. Bake for 30 minutes or until fish is cooked through.
  7. Sprinkle with chopped parsley before serving.

  • Use firm white fish like cod or haddock.
  • Marinate fish for 1 hour for deeper flavor.
  • Serve with crusty bread or rice.
