Description
A traditional Greek-style fish dish, marinated and baked with vegetables and herbs.
Ingredients

- 500g white fish fillets
- 2 onions, sliced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1/2 cup olive oil
- 1/2 cup white wine
- 1 lemon, juiced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup parsley, chopped
Instructions
- Preheat oven to 180°C (350°F).
- Layer onions, carrots, celery, and tomatoes in a baking dish.
- Place fish fillets on top of the vegetables.
- Mix olive oil, white wine, lemon juice, oregano, salt, and pepper in a bowl.
- Pour the marinade over the fish and vegetables.
- Bake for 30 minutes or until fish is cooked through.
- Sprinkle with chopped parsley before serving.
Notes
- Use firm white fish like cod or haddock.
- Marinate fish for 1 hour for deeper flavor.
- Serve with crusty bread or rice.
