Description
Rolmopsy are traditional Polish pickled herring rolls, often served as an appetizer or snack.
Ingredients

- 4 pickled herring fillets
- 1 small onion, thinly sliced
- 4 pickles, sliced lengthwise
- 1 tbsp mustard
- 1 tbsp horseradish
- 4 toothpicks
Instructions
- Lay the herring fillets flat on a clean surface.
- Spread a thin layer of mustard and horseradish on each fillet.
- Place a few onion slices and one pickle slice on each fillet.
- Roll the fillets tightly around the filling.
- Secure each roll with a toothpick.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Use fresh pickled herring for best results.
- Adjust the amount of horseradish to your taste.
- Serve cold with rye bread or crackers.
