Ingredients

- 1 cup lentils
- 2 carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups water or vegetable broth
- 1 bay leaf
Instructions
- Rinse the lentils under cold water.
- Heat oil in a pot and sauté onions, carrots, and garlic until soft.
- Add lentils, water, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- Remove bay leaf before serving.

- Soak lentils for faster cooking.
- Adjust seasoning to taste.
