Description
A traditional French pastry served during Epiphany, made with puff pastry and filled with almond cream.

- 2 sheets of puff pastry
- 100g almond flour
- 100g sugar
- 100g softened butter
- 2 eggs
- 1 tsp vanilla extract
- 1 egg yolk (for glazing)
Instructions
- Preheat your oven to 180°C (350°F).
- Mix almond flour, sugar, butter, eggs, and vanilla extract to make the almond cream.
- Roll out the puff pastry sheets and cut two circles.
- Spread the almond cream on one circle, leaving a border.
- Place the second circle on top and press the edges to seal.
- Cut the outer edges to create a crown shape.
- Brush with egg yolk for a golden finish.
- Bake for 25-30 minutes until golden brown.
Notes
- Traditionally, a small charm is hidden inside the pastry.
- Best served warm.
