Description

A festive French dessert combining pistachio and raspberry flavors in a traditional Yule log shape.


Ingredients

Scale
  • 200g pistachio paste
  • 150g fresh raspberries
  • 4 eggs
  • 100g sugar
  • 80g flour
  • 300ml heavy cream
  • 50g powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Beat eggs and sugar until fluffy.
  3. Fold in flour and pistachio paste gently.
  4. Spread batter on a lined baking sheet.
  5. Bake for 12-15 minutes until golden.
  6. Whip cream with powdered sugar and vanilla.
  7. Spread cream over cooled cake, add raspberries.
  8. Roll carefully from the short end.
  9. Chill for 2 hours before serving.

Notes

  • Use a damp towel to help roll the cake.
  • Fresh raspberries work best for filling.
  • Dust with powdered sugar for presentation.
