Description

A lemon meringue Yule log, a festive dessert combining the lightness of lemon meringue with the traditional buche de noel.


Ingredients

Scale
  • 4 eggs
  • 100g sugar
  • 80g flour
  • 1 lemon (zest and juice)
  • 200g whipping cream
  • 3 egg whites
  • 150g powdered sugar

Instructions

  1. Preheat your oven to 180°C.
  2. Beat eggs and sugar until light and fluffy.
  3. Fold in flour and lemon zest.
  4. Pour the batter onto a lined baking tray and bake for 10-12 minutes.
  5. Roll the cake while still warm and let cool.
  6. Whip cream with lemon juice and spread over the unrolled cake.
  7. Beat egg whites with powdered sugar to make meringue.
  8. Spread meringue over the cake and use a torch to brown lightly.
