A lemon meringue Yule log, a festive dessert combining the lightness of lemon meringue with the traditional buche de noel.
Ingredients

- 4 eggs
- 100g sugar
- 80g flour
- 1 lemon (zest and juice)
- 200g whipping cream
- 3 egg whites
- 150g powdered sugar
Instructions
- Preheat your oven to 180°C.
- Beat eggs and sugar until light and fluffy.
- Fold in flour and lemon zest.
- Pour the batter onto a lined baking tray and bake for 10-12 minutes.
- Roll the cake while still warm and let cool.
- Whip cream with lemon juice and spread over the unrolled cake.
- Beat egg whites with powdered sugar to make meringue.
- Spread meringue over the cake and use a torch to brown lightly.

- Keep the cake covered to prevent drying.
- Use fresh lemon juice for the best flavor.
