Description
Bigos Staropolski is a traditional Polish hunter’s stew made with sauerkraut, fresh cabbage, and various meats. It’s a hearty dish with rich flavors, perfect for cold days.
Ingredients

- 500g sauerkraut
- 500g fresh cabbage
- 300g pork shoulder
- 200g smoked sausage
- 150g bacon
- 100g dried mushrooms
- 1 onion
- 2 bay leaves
- 5 allspice berries
- 1 tbsp tomato paste
- salt and pepper to taste
Instructions
- Chop the fresh cabbage and rinse the sauerkraut.
- Dice the pork, sausage, and bacon.
- Soak dried mushrooms in warm water for 30 minutes.
- Fry the onion and bacon in a large pot.
- Add pork and sausage, cook until browned.
- Add both cabbages, mushrooms, bay leaves, allspice, and tomato paste.
- Simmer for 2 hours, stirring occasionally.
- Season with salt and pepper.
- Serve hot with bread.
Notes
- Bigos tastes better the next day.
- You can add prunes for sweetness.
- Use a mix of meats for richer flavor.
