Description
A traditional Polish Christmas Eve beet soup, known for its vibrant color and rich flavor.
Ingredients

- 4 medium beets, peeled and grated
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 2 tbsp lemon juice
- 1 tbsp sugar
- 1 bay leaf
- 4 whole allspice berries
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the grated beets and cook for 5 minutes.
- Pour in the vegetable broth and add the bay leaf and allspice berries.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in lemon juice and sugar.
- Season with salt and pepper.
- Remove the bay leaf and allspice berries before serving.
- Garnish with fresh dill.
Notes
- Serve hot with uszka (small mushroom-filled dumplings).
- For a richer flavor, you can add a splash of vinegar.
- Traditionally served as the first course on Christmas Eve.
