Description
A traditional Polish Christmas Eve beet soup, known for its vibrant color and rich flavor.
Ingredients

- 4 medium beets, peeled and grated
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 2 tbsp vinegar
- 1 tbsp sugar
- 1 bay leaf
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Heat oil in a pot and sauté onion until translucent.
- Add garlic and grated beets, cook for 5 minutes.
- Pour in vegetable broth, add bay leaf, vinegar, and sugar.
- Simmer for 30 minutes until beets are tender.
- Season with salt and pepper.
- Remove bay leaf and serve hot, garnished with fresh dill.
Notes
- For a richer flavor, add mushroom broth.
- Serve with uszka (small dumplings) for a traditional touch.
- Refrigerate leftovers for up to 3 days.
