Description

A traditional Polish Christmas Eve beet soup, known for its vibrant color and rich flavor.


Ingredients

Scale
  • 4 medium beets, peeled and grated
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Heat oil in a pot and sauté onion until translucent.
  2. Add garlic and grated beets, cook for 5 minutes.
  3. Pour in vegetable broth, add bay leaf, vinegar, and sugar.
  4. Simmer for 30 minutes until beets are tender.
  5. Season with salt and pepper.
  6. Remove bay leaf and serve hot, garnished with fresh dill.

Notes

  • For a richer flavor, add mushroom broth.
  • Serve with uszka (small dumplings) for a traditional touch.
  • Refrigerate leftovers for up to 3 days.
