Description

Ardei umpluti is a traditional dish made with bell peppers stuffed with a flavorful mixture of ground meat, rice, and spices.


Ingredients

  • 6 large bell peppers
  • 500g ground meat (beef, pork, or a mix)
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 egg
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp vegetable oil
  • 1/2 cup water

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cut the tops off the peppers and remove seeds.
  3. In a bowl, mix ground meat, cooked rice, onion, garlic, egg, tomato paste, salt, pepper, and paprika.
  4. Stuff the peppers with the mixture.
  5. Place peppers in a baking dish and drizzle with oil.
  6. Add water to the dish.
  7. Bake for 45-50 minutes until peppers are tender.
  8. Serve warm.

Notes

  • You can use any color of bell peppers.
  • Replace meat with mushrooms for a vegetarian version.
  • Leftovers can be refrigerated for up to 3 days.
