Description
Ardei umpluti is a traditional dish made with bell peppers stuffed with a flavorful mixture of ground meat, rice, and spices.
Ingredients

- 6 large bell peppers
- 500g ground meat (beef, pork, or a mix)
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 egg
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp vegetable oil
- 1/2 cup water
Instructions
- Preheat oven to 180°C (350°F).
- Cut the tops off the peppers and remove seeds.
- In a bowl, mix ground meat, cooked rice, onion, garlic, egg, tomato paste, salt, pepper, and paprika.
- Stuff the peppers with the mixture.
- Place peppers in a baking dish and drizzle with oil.
- Add water to the dish.
- Bake for 45-50 minutes until peppers are tender.
- Serve warm.
Notes
- You can use any color of bell peppers.
- Replace meat with mushrooms for a vegetarian version.
- Leftovers can be refrigerated for up to 3 days.
